A quick post to let you know what I put into this little smoothie/juice & why I’m drinking it so much lately..
So fast fact – I had never, really absolutely totally never, made my own smoothie until I had to get my wisdom teeth out in late 2014 – and it was only done then out of necessity and after I purchased myself a cheap mix and go bottle blender thing because I was convinced I wouldn’t be able to eat anything for 40 days and 40 nights (it ended up being about 6).
But then I discovered them and loved them! Best thing ever! Why did I not do this before?! I made one every single morning and took it to work (day job work, where I took all the health foods to work in an effort to resist the chocolates on the desk opposite mine). It lasted about 6 months and I forgot about them again (unless I was making mojitos in summer. Yup..), until a few weeks ago.
So this morning, as I woke up determined to start this week lighter & fresher as I’ve been feeling not-so-light and fresh, I pulled out my little mix-n-go to start the day with my favourite smoothie arrangement and called it breakfast.
This is what I added..
- ¾ of a cup of diced fresh pineapple
- ½ a cup of blueberries
- 1 tsp of grated ginger
- ½ a cup of spinach
- ½ an orange
- Juice of ¼ of a lime
- 1 tsp of almond meal
- Pomegranate seeds
- Coconut flakes
- Blend everything but the almond meal, pomegranate and coconut.
- Top with almond meal, pomegranate and coconut!
I’ll admit I probably didn’t need that in a proper recipe format, but it’s nice to properly record what I do, even if it’s just for my own reference later on. I find it really fascinating looking back on how I ate or drank in the past. A few years back, I would never eat any bread or pasta… story for another day!
